INTERNATIONAL STANDARDS FOR FOOD SAFETY

T. Kirova, R. Hristova

Abstract

Food safety warranting is an important problem of economic development nowadays, especially under the conditions of crisis. Introduction, observation and certification of the internationally recognized standards concerning food safety represent one of the ways to solve this task. Building up of a system for management of the quality and its safety according to ISO 22000 provides an integrated approach to the firms enabling them to warrant safe woods of constant quality for their consumers. Offering the food- stuffs in the large trade chains requires additional safety guarantees which necessitate the introduction and observation of the requirements of International food standard (IFS) and British retail consortium (BRC) standards. This, on its part, demands a high competence and maintenance of a strict control by the state authorities.
